Trainee story

Carlos has shown dedication to learning and growing in the kitchen throughout his time at Sprouts Chef Training. His culinary journey began at home where he would  make simple snacks like guacamole and quickly evolved into preparing full meals such as chicken cutlets and shrimp fettuccine. Excited at the opportunity to expand what he was able to make for himself he found Sprouts through Exalt Youth.

Carlos was thrilled to find out that he was placed at the Pecking House under Eric Huang. He was excited for this opportunity because being in the kitchen was a great distraction for him and gave him a place to grow his skills as well. The program has pushed Carlos to step out of his comfort zone and embrace new techniques. He’s been steadily improving in all areas, from knife skills to learning how to make unique recipes like green mayonnaise and desserts.  His favorite accomplishment has been perfecting a lemonade served at the restaurant, where he crafts everything from scratch, including the lemongrass simple syrup. Baking has been a new adventure for him, especially working with brownies and cornbread. While there are challenges, such as mastering the precise timing and techniques needed for these dishes, Carlos finds joy in the process of experimenting and expanding his skill set.

Carlos' passion for cooking started at home, and he is eager to continue creating meals not only for himself but also for his family. His journey from making guacamole to more complex dishes shows his drive for culinary growth, and he dreams of taking his skills to new heights in other kitchens. Cooking has become more than just a hobby; it’s an outlet that allows him to channel his energy and creativity into something productive and fulfilling.
