Trainee story

Oliver came to his first shift at Foreign Cinema prepared and ready to work. Within the first few minutes of meeting, Oliver and Chef Eric Gibbs hit it off, discussing restaurant capacity, Oliver's knife roll, and a plethora of questions about produce. Oliver's confidence in the kitchen stemmed from a young age when he learned to cook with his family, developing a love for turning simple ingredients into extraordinary dishes. His passion for culinary exploration grew with his travels, especially his recent trip to France. With this experience and deep passion for cooking, Oliver fit right into the Foreign Cinema team.


Given Oliver's cooking background, Chef Eric felt confident throwing him right into the mix, and Oliver thoroughly rose to the occasion. He quickly progressed from prepping to handling more detail-oriented projects, such as cutting their notoriously thin beef carpaccio. He also learned to break down large cuts of tuna and began developing his butchering skills. Oliver was most thankful for these opportunities through Sprouts, as it would be hard to find such experiences working with these types of meats or alongside highly skilled chefs.

Chef Eric recognized Oliver's passion, stating how much of a pleasure it was to watch him quickly grow in the kitchen, calling him a "diamond in the rough." Oliver's tenacity for cooking extends beyond the Foreign Cinema kitchen, as he loves experimenting with new recipes in his free time. On the rare occasion that Oliver isn't cooking, he enjoys playing video games or scrolling through Reddit. While his ultimate goal is to own a restaurant, Oliver looks forward to more opportunities to gain experience in the kitchen.
