Trainee story

Xadani sees cooking not only as a creative outlet but also as a way to share and showcase his culture. Growing up in a Mexican and Guatemalan household, Xadani developed a love for cooking by watching his grandmother pass down recipes to his mom, who eventually passed these on to him. Seeking to gain a better understanding of the culinary world and hoping to share his family's traditions with others, Xadani found Sprouts, where he was placed with Chef Aaron Escalada at Abaca.

Xadani starts his day off with a list of tasks ranging from prepping vegetables to tasting different dishes to understand the flavor profiles Chef Aaron aims to achieve. He quickly took to the kitchen, with not only Chef Aaron showing him the ropes but also everyone in the kitchen pitching in to help him grow as a cook. The team provided him with valuable tips and tricks, which Xadani took to heart, constantly seeking to improve himself. Along with his newfound ability to move efficiently around the kitchen, he is also proud of his plating skills and portioning. Xadani boasts during his calls that he can now help his mom more in the kitchen and start to master those cherished family recipes.

Outside of the kitchen, Xadani shares his culture by joining multiple campus clubs, where he actively participates in events and activities that celebrate his heritage. In his free time, he enjoys hanging out with friends, often cooking meals for them that showcase the flavors he grew up with. Looking ahead, he hopes to continue his culinary journey, possibly venturing into baking, and dreams of one day opening his own restaurant to share his family's recipes with a wider audience.
