Trainee story

Michelle Cruz Osornio is a determined and passionate young woman who has found her calling in the culinary arts. From a young age, Michelle knew she wanted to be a chef, and this internship has reinforced her dedication to that path. Her inspiration for cooking began with her experiences at school, where a chef mentor encouraged her to explore the kitchen and helped her view cooking as more than just a task—it became a creative outlet and a career goal. She was  eager to sharpen her skills at Sorrel under the supervision of chef Alex. Michelle hopes  to attend culinary school to build a professional career in the kitchen. 

Michelle thrives in the kitchen environment and has shown great growth during her time in the program. Initially nervous and hesitant, she has overcome challenges, such as refining her plating skills and gaining confidence with new responsibilities. Her favorite tasks include plating dishes like yellowtail with passion fruit and oranges and transforming beets into intricate roses. Recently, she successfully plated and served 65 covers, a milestone that filled her with pride and excitement. Michelle’s favorite memory from the internship was working alongside Chef Nagi, who she admires for his approachability and kindness. 

Post internship Michelle  has also been exploring culinary schools in the Bay Area to further her education and pursue her ultimate goal of becoming a chef. Outside of the kitchen, Michelle enjoys skateboarding with friends and exploring new places on her board. Michelle Michelle is grateful for the opportunity to gain experience in all aspects of a professional kitchen and is eager to continue her journey. She hopes to connect with her current restaurant about potential employment opportunities and is excited for what lies ahead.
